Ingredients

  • 1/2 kilo dried ground za'atar (after removing all impurities, of course). This type of za'atar is said to be called zoubaa, and its leaves are broad.
  • 1 kilo toasted sesame seeds
  • 400 g sumac, stripped from the stems and ground
  • 1/4 cup olive oil
  • 2 tablespoons salt
  • Note:
  • The amount of sumac can be increased to 1/2 kilo, ground, according to taste and the acidity of the sumac.
  • The amount of sesame can also be increased or reduced as desired.
  • Adding 1/4 cup olive oil in the first step of the preparation is optional, and stirring the za'atar in the tray over the heat for 5 minutes is optional too.

Method

  1. Add 1/4 cup olive oil over the za'atar and rub well.
  2. Put the za'atar in a tray and stir it over medium heat for only 5 minutes, just until the aroma of the za'atar is released.
    Timers: 5 min
  3. Remove from the heat and add the sumac, toasted sesame seeds, and salt, then mix.
  4. Wait until the za'atar cools completely, then store it in tightly sealed jars.
  5. When serving, mix a quantity of za'atar with olive oil in a cup, or sprinkle the za'atar on bread and drizzle the oil over it, then roll the sandwich and serve.
