Ingredients

  • 1 cup superfine sugar
  • 1 1/2 cups shredded coconut
  • 4 egg whites

Method

  1. Mix the ingredients well, then place them in a saucepan over low heat
  2. Stir constantly until the mixture becomes soft and the sugar dissolves completely. You should heat the mixture without letting it boil
  3. Set the mixture aside until it reaches room temperature
  4. Line a baking tray with parchment paper, then shape the coconut mixture into balls and arrange them on the tray, leaving some space between each one
  5. Bake in the middle of a preheated oven at a medium temperature with both top and bottom heat turned on, until the balls spread into discs and turn lightly golden. It should take no more than 7 minutes
