Ingredients

  • Ready-made phyllo dough or homemade phyllo dough *
  • Ghee for brushing the dough
  • Finely crushed pistachios
  • Sugar syrup (qater or sheera)
  • Wooden skewer

Method

  1. Divide the filo dough into sections about 15 cm long and 10 cm wide.
  2. Take two sheets of filo, brush each with ghee, place the wooden stick at the edge of the layered sheets and start rolling without rolling all the way to the end.
  3. Pull the stick out of the roll and fold the ends of the dough over each other to form a circle.
  4. Arrange the circles on a buttered baking tray, then bake in a preheated oven at 200°C for about 20 minutes, or until they harden, puff up, and the tops turn golden.

  5. Sprinkle finely crushed pistachios over each circle, then carefully pour cold syrup over them so the circles don’t shift and the pistachios stick.
