Ingredients:

Fish of choice

3 large onions

2 1/2 cups rice

1 tablespoon ground cumin

Pinch of nutmeg

1/2 teaspoon ground cinnamon

Hot pepper or chili to taste

1/4 teaspoon caraway

Salt

Garlic

Spices to taste: cinnamon stick, cloves, cardamom

Preparation:

Choose the type of fish based on availability and preference, but ideally fish with a good amount of flesh.

The fish can be fillets or skinless fillet pieces.

Fry the fish first, then reserve some of the oil and fry the sliced onions until deeply golden-brown. Add the minced garlic.

Meanwhile, remove bones from the fish and add them to the onions with the spices. Add 4 cups of water (or as needed for your rice).

Let the mixture boil for about 5 minutes to make a brownish sauce, stirring occasionally. Then add rinsed rice and simmer until cooked.

Top with the remaining fish and a few fried pine nuts, if desired.
