Sablé Number Cake

A special number-shaped sablé cake — perfect for children’s birthday parties. The cake is made with sablé dough and filled with a creamy cream-cheese filling kids and adults will love.

Ingredients

  • 350 g all-purpose flour
  • 200 g butter, cut into cubes
  • 75 g icing sugar
  • 75 g ground almonds
  • 1 egg
  • pinch of salt
  • 1 teaspoon vanilla
  • Cream filling
  • 400 g cream cheese
  • 400 ml heavy whipping cream
  • 180 g icing sugar
  • pinch of vanilla

Method

Follow the cooking sequence without leaving the page.

  1. Mix the flour, sugar, ground almonds and a pinch of salt together, add the butter and rub it into the flour until absorbed.
  2. Add the egg and vanilla and bring the dough together without kneading.
  3. Wrap the dough in cling film and refrigerate for one hour to rest.
  4. After the time passes, roll the dough between two sheets of parchment and cut it into the desired shapes.
  5. Place the dough on a parchment-lined baking tray and bake for 10 to 12 minutes, then remove from the oven and let them cool completely.

  6. Prepare the cream: beat the cheese slightly by itself, then add the sugar and vanilla and beat, finally add the liquid cream and beat until the cream firms up.
  7. When the sablé number cake has cooled completely, pipe the cream with a piping bag, fill the cake and decorate as desired.
  8. Refrigerate the sablé number cake for several hours until it firms up well before serving.
