Sablé is one of the most beloved types of biscuits.

1 cup cornstarch (cornflour)

Pinch of salt

200 g butter

1 cup oil

Powdered sugar, about 1 cup (or 175 g)

1/2 teaspoon baking powder

1 teaspoon (≈8 g) vanilla

2 eggs

Lemon zest

4 cups (or slightly more) flour

Jam or chocolate

Sift the flour with the cornstarch, baking powder and salt.
In a mixer, cream the butter at room temperature until it becomes light and creamy.
Add the oil to the butter in stages (a little at a time). Then add the eggs, lemon zest and vanilla and beat.
Add the flour mixture in batches and mix by hand until the dough holds together—do not overwork the dough for best results.
Chill the dough in the refrigerator for 30 minutes before shaping.
Roll the dough thinly between two sheets of plastic, cut the sablés into the desired shapes and place them on a baking tray without greasing it, since the dough already contains butter.
Bake on the lower rack in a preheated oven for about 10 minutes, monitoring according to your oven’s strength.
Brown them slightly on the upper rack for about 5 minutes until they reach the desired color.
Remove from the oven and let the sablés cool, then sandwich two pieces together with jam or chocolate filling.
