Qatayef batter with nigella seeds... an inventive, distinctive recipe exclusive to our site
Ingredients
- 1 1/2 cups flour
- 1/2 cup fine semolina or farina
- 2 tablespoons nigella seeds
- 1 tablespoon sugar
- 1 tablespoon instant yeast
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon cornstarch
- 2 cups warm water, or more or less as needed, depending on the dough and type of flour
- 1 tablespoon vinegar
- 1 teaspoon baking soda
- crushed pistachios, for garnish

Method
- Mix the ingredients well except for the vinegar and baking soda, and let them ferment for about 20 minutes.Timers: 20 min
- Before we start shaping the qatayef, mix the vinegar and baking soda together in a small cup, then add them to the qatayef batter and mix well. Then immediately start using it.
- In a skillet over medium heat, start making the qatayef in circles according to the size you want. When bubbles appear, sprinkle each one with a little nigella seeds. When the underside turns golden, remove the qatayef from the heat and place them on a clean cloth and cover them so they stay soft.
- Fill the qatayef with cold ashta, garnish with pistachios, and serve with syrup.
