Ingredients

  • Qatayef batter:
  • 2 cups flour
  • 1 cup fine semolina
  • 2 1/2 cups lukewarm water
  • 1 cup liquid milk
  • 1 teaspoon salt
  • 1 teaspoon yeast
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • A splash of rose water
  • Ashtaa filling:
  • 1 liter milk
  • A very small cup of lemon juice, or 1/4 cup
  • 1 tablespoon yogurt
  • 1 ready-made container of qaimar ashtaa, or 1 container mascarpone cheese
  • Ashtaa method:

Method

  1. Blend all the qatayef batter ingredients in a blender for several minutes until the mixture is smooth and well combined
  2. Set the batter aside for 1 hour to rest
    Timers: 60 min
  3. After 1 hour, start cooking the qatayef
    Timers: 60 min
  4. Use a nonstick pan. Heat it slightly, then pour in the batter in the form of round discs of the desired size
  5. Wait until all the bubbles have come to the surface before removing the discs from the pan
  6. Continue cooking the rest the same way until all the batter is used up
  7. Cover the qatayef discs with a clean cloth so they stay soft until filling with ashtaa and serving, and serve with syrup prepared earlier
  8. Note: If you use this batter for fried qatayef, you will get crispy qatayef
  9. Put the milk in a pot over the heat
  10. When it is warm, add the lemon juice and yogurt and stir
  11. Let it simmer briefly over low heat until the milk separates and curds form
  12. Strain the milk to collect the curds and leave them in the strainer long enough to drain off all the water
  13. Mix the curds you obtained well with the container of qaimar or mascarpone
  14. Leave the ashtaa in the fridge to chill well before use
