Ingredients
- 3 boiled potatoes
- 1 cup fresh green basil
- 1 cup red pepper
- 1/2 cup green onion
- a small handful of chopped mint
- 1/2 teaspoon crushed hot pepper
- 1 tablespoon mashed garlic
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup lemon juice

Method
- Wash the potatoes and boil them then let them cool, then cut them into small cubes
- Wash the basil and chop it finely... also wash the red pepper and cut it into small cubes
- Start by preparing the salad dressing: put the lemon juice, mashed garlic, olive oil, and hot pepper in a bowl, then mix well
- Add the black pepper and salt to the dressing mixture and stir well until combined
- In another bowl, place the chopped basil, boiled potato cubes, red pepper, green onion, and mint...
- Toss gently, being careful not to mash the potatoes
- Place the boiled potato and vegetable mixture in a serving dish.
- Pour the dressing over the potato mixture and toss, then serve this easy and delicious potato salad
