Ingredients:

\r\n5 boiled potatoes\r\n\r\n2 boiled beets\r\n\r\nKibbeh mix*\r\n\r\n \r\n

Kibbeh Mix:

\r\n

Fine bulgur

\r\n

1 small dried onion

\r\n

Pinch of dried mint and kebbeh spices (dakka kibbeh)

\r\n

Mardook

\r\n

Hot or chili to taste

\r\n

Salt

\r\n\r\n

\r\n \r\n

Method:

\r\nMash the boiled potatoes well and mix with bulgur, salt, and the assorted spices or the kumouna mix.\r\n\nDivide the potato kibbeh dough into two portions.\r\n\nMash the beets and add to one portion of the bulgur-potato mixture.\r\n\nSpread the first portion in a serving dish, then layer the red beet portion mixed with beets on top.\r\n\nThus you get a two-layer potato kibbeh: the first layer the traditional potato kibbeh mix, the second the beet potato kibbeh mix.\r\n\nGarnish the beet potato kibbeh with vegetables like radish and parsley as desired.\r\n\r\n
