  • 4 cups granulated sugar
  • 1 cup cornstarch
  • 3 cups water
  • 1/2 teaspoon ground mastic
  • 1 tablespoon rose water

Method

  1. In a pot over the heat, place 2 cups water and 2 cups sugar, and keep stirring until the mixture comes to a boil.
  2. Dissolve the 1 cup cornstarch in the third cup of water that we set aside.
  3. When the sugar mixture boils, add the cornstarch dissolved in water. Add the cornstarch very slowly, like a thin thread, while stirring continuously, quickly, and without stopping for 15 minutes...

  4. After 15 minutes, add the remaining 2 cups of sugar in 5 batches and continue stirring quickly with a wooden spoon for at least 25 minutes. When the mixture finally becomes elastic, add the mastic and rose water and continue stirring, then turn off the heat.

  5. In a separate pan, toast the amount of pistachios you want to use. When the pistachios are toasted and removed from the heat, add 1 teaspoon ghee. Once they cool, add them to the sugar mixture and keep stirring until the ingredients are well combined...
  6. Spread a piece of kitchen plastic wrap on a table and grease it with oil. Pour the hot sugar mixture onto the plastic wrap and roll it into a cylinder like a log, then place it in the refrigerator (not the freezer) for 3 hours.

  7. After the time has passed, remove the plastic wrap, sprinkle the delight with cornstarch and powdered sugar, and cut it as desired.
  8. Note: It is always best to use the same cup as the measuring standard for the recipe. So the actual size of the cup does not matter, as long as the same cup is used for all ingredients.
