Ingredients
- 2 eggs
- 2 cups flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1 tsp vanilla
- 1 1/2 cups milk
- Clotted cream and honey or chocolate syrup to garnish

Method
- Whisk the ingredients until you have a slightly loose batter.
- Heat a nonstick pan. Pour a small-to-medium round of batter into the pan to make a thin pancake.
- Cook over low heat.
- When the top has set but isn’t fully dry, place a whole peeled banana lengthwise on the pancake and roll the pancake around it.
- Let the roll sit briefly in the pan to finish drying, then remove.
- Repeat with the remaining batter.
- Slice the banana-filled pancake rolls into thick rounds to resemble sushi.
- Arrange on a serving plate.
- Garnish with clotted cream and honey or chocolate sauce as desired.
