Muhammar — a popular, delicious Palestinian dish.

Ingredients

  • Chicken
  • Potatoes
  • Salt
  • 200 g onion
  • 1 tbsp hot pepper paste
  • 1 tbsp whole cumin seeds
  • 1/2 tsp sweet spice
  • 1/2 tsp black pepper
  • 1/2 tsp ground ginger
  • 2 cups chicken stock

Method

  1. Rub the chicken with lemon juice or vinegar and salt, rinse, then parboil it with aromatics until about half-cooked.
  2. Slice the potatoes into rounds, sprinkle with salt, and fry them.
  3. Place the chicken and potatoes in the baking tray and prepare the sauce: grate the onion and mix it with the spices, salt, hot pepper paste and the stock.
  4. Pour the sauce over the chicken and potatoes in the tray.
  5. Bake in a preheated oven (top and bottom heat) at 200°C (about 390°F) for around 30 minutes, or until the chicken is cooked through and nicely browned.
