Palestinian Muhammar (Spicy Roasted Chicken and Potatoes)
Muhammar is a very popular Palestinian dish: chicken and potatoes in a distinctive spicy sauce. The tray is roasted in the oven until the chicken is well browned.

Ingredients
- Chicken
- Potatoes
- Salt
- 200 g onion
- 1 tbsp hot pepper paste
- 1 tbsp whole cumin seeds
- 1/2 tsp sweet spice
- 1/2 tsp black pepper
- 1/2 tsp ground ginger
- 2 cups chicken stock
Method
- Rub the chicken with lemon juice or vinegar and salt, rinse, then parboil it with aromatics until about half-cooked.
- Slice the potatoes into rounds, sprinkle with salt, and fry them.
- Place the chicken and potatoes in the baking tray and prepare the sauce: grate the onion and mix it with the spices, salt, hot pepper paste and the stock.
- Pour the sauce over the chicken and potatoes in the tray.
- Bake in a preheated oven (top and bottom heat) at 200°C (about 390°F) for around 30 minutes, or until the chicken is cooked through and nicely browned.Timers: 30 min
