1½ kg large shell-on jumbo shrimp (prawns)

Marinade

1/2 cup soy sauce (optional)1/2 cup lemon juice1/2 cup olive oil6 cloves garlic, crushedA pinch of black pepper1 tsp fish seasoning1 tsp paprika1 tsp chili powder1/4 cup chopped fresh cilantro (coriander)

Grilling

1 onion, slicedHot pepper slices — optional

Using scissors or a knife, butterfly the back of each shrimp and remove the black vein, leaving the shell and head intact.
