Oven-baked lemon and garlic chicken is a practical, very easy recipe that's perfect for the busy home cook!

Ingredients:

2 kg chicken thighs

1 kg potatoes, peeled and sliced

3 lemons

2 heads garlic (about 12 cloves)

Mastic (mastic resin)

Bay leaves

Onion

Whole cloves (for boiling)

Tahini and vinegar for washing the chicken

Sweet spice (mild spice blend)

A pinch of ground cinnamon

Cumin

Chicken seasoning

Black pepper

Preparation:

Start by cleaning the chicken well and rubbing it with lemon, vinegar, and tahini.
Boil the cleaned chicken and add aromatics like onion, whole cloves, and bay leaves. Parboil it — cook until nearly done but not fully cooked.
Peel and slice the potatoes, then fry them in oil until half-cooked as well.
Prepare the chicken marinade: crush the garlic (you can reduce or increase the amount of garlic to taste).
Add the lemon juice to the garlic along with the various spices.
Add a little of the chicken's cooking water to the marinade with 1 teaspoon of "aqdat safra" (a yellow coloring spice) or turmeric.
Place the chicken and potatoes in a baking tray, then pour the marinade over them.
Put the tray in a preheated oven and bake for about 40 minutes, or until the chicken is fully cooked — adjust time according to your oven.
