Oven-baked cheesecake in cupcake molds — try this successful recipe with a special presentation

Ingredients

  • 8 Kiri portions or one package of Philadelphia or any cream cheese
  • 2 eggs
  • 1 tablespoon liquid vanilla extract
  • 3/4 cup caster sugar
  • 2 tablespoons cornstarch
  • 1/2 cup (100 g) liquid cream
  • 8 to 10 digestive biscuits
  • 1/4 cup melted butter
  • Chocolate sauce or strawberry or blueberry sauce or powdered sugar or other topping
  • Strawberry (fraise) sauce:
  • 1 cup strawberries
  • 1 tablespoon lemon juice
  • 1 1/2 cups sugar
  • 1/2 cup water
  • Strawberry sauce:
  • In a pot, put the strawberries with the lemon, sugar, and water and leave them until they reduce slightly from boiling
  • Mash the mixture and let it cool before spreading over the cheesecake; you can leave it unmashed to keep whole strawberry pieces

Method

  1. Crush the biscuits and mix them with the butter until they resemble sand.
  2. Place it in the molds and press firmly.
  3. Prepare the filling by putting the cheese, sugar, and liquid cream together and whisking them.
  4. Add the eggs one at a time with the vanilla and cornstarch and whisk until the mixture is creamy like cake batter.
  5. Spoon the mixture into the molds over the biscuit layer, then place the tray of molds into a larger baking pan filled halfway with hot water for a water bath in a preheated oven.
  6. Bake the molds for 35 to 40 minutes depending on oven strength; keep at medium heat and monitor until the filling sets and firms.

  7. Leave the cheesecake molds at room temperature for half an hour, then put them in the refrigerator.
  8. When they have cooled well, spread the desired sauce on top and serve the cheesecakes.

  10. Mash the mixture and let it cool before spreading over the cheesecakes; you can leave it unmashed to keep the strawberry pieces whole.
