Lemon cake or orange cake is one of the most delicious cakes of all time... simple, easy, and wonderfully fragrant. Does it remind you of your mothers? :)

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 cup fresh orange juice (or a packet dissolved in water if fresh is not available)
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda (baking soda)
  • 1 tablespoon vinegar
  • 2 tablespoons yogurt
  • Lemon or orange zest

Method

  1. Whisk the eggs, sugar, vanilla, and lemon or orange zest until you get a white mixture.
  2. Add the yogurt, vinegar, and bicarbonate of soda and whisk.
  3. Then add the juice and oil and whisk again.
  4. Finally, add the dry ingredients of flour and baking powder after sifting them together, and mix until the batter is well combined.
  5. Grease the cake pan with tahini and pour the cake batter into it.
  6. Place the pan on the middle rack in an oven preheated to 200°C for only 15 minutes, then lower the heat to 180°C and leave it for about 30 to 45 more minutes, depending on the strength of the oven... You can check the cake after half an hour in the oven, but not before.

  7. Serve the orange cake once it has cooled to room temperature.
