Orange cake is one of the easiest and tastiest cakes. You can add a little chocolate chips or dried fruit for extra flavor.

Ingredients

  • 2 1/2 cups flour
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 cup fresh orange lemon juice
  • 1/2 cup oil
  • 2 tablespoons white vinegar
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/2 cup coconut - optional
  • Chocolate chips - optional
  • Dried fruit or small pieces of figs - optional

Method

  1. Beat the eggs, sugar, vanilla, and lemon zest together until the sugar dissolves completely.
  2. Add the juice and beat, then add the oil and beat again.
  3. Add the flour and baking powder in batches after sifting them 3 times, and mix alternately with a spatula or wooden spoon.
  4. Coconut can also be added at this stage, if using, and mixed in.
  5. Grease a cake pan with oil or tahini and pour in the orange cake batter, then sprinkle the chocolate chips or dried fruit over the top.
  6. Place the cake in a preheated oven on the middle rack at 180°C for the first 15 minutes, then reduce the heat to 160°C until fully cooked. It takes about 50 minutes, or as needed depending on the oven.

  7. Serve the orange cake at room temperature.
