Oatmeal-chocolate bars — a wonderful, healthy and satisfying treat!

Ingredients

  • 1/4 cup peanut butter (or substitute almond butter)
  • 1/4 cup honey
  • 1/4 cup coconut oil (or substitute butter)
  • 1 teaspoon vanilla
  • Pinch of salt
  • 2 cups oats
  • 1/4 cup cocoa powder (chocolate powder)
  • Raisins (or any dried fruit substitute)
  • Pistachios (or any chopped nuts)

Method

  1. Toast the oats lightly in a pan, then mix them well with the salt and cocoa powder.
  2. In another bowl, combine the honey, peanut butter and coconut oil and heat in the microwave to melt them.
  3. Stir the melted mixture, then pour it over the oats.
  4. Mix everything well, then add the raisins and pistachios and stir again.
  5. Line a rectangular pan with a bag or parchment, sprinkle crushed pistachios on the base, pour in the oat mixture, close the bag/parchment and press down firmly with another rectangular pan.
  6. Chill in the refrigerator (not the freezer) for about two hours, then cut into small rectangles.
