Oat, carrot, and apple cake in a successful homemade recipe.. Just from the name, you can tell how wholesome and rich this cake is. The carrot and apple give it a wonderfully tender texture.

Ingredients:

1 1/2 cups flour 1 1/2 cups whole oats 1 cup grated carrot 4 eggs 2 cups sugar 1 cup orange and lemon juice Zest of 1 lemon 1 tablespoon baking powder 1 teaspoon vanilla 1/4 teaspoon nutmeg 1 teaspoon cinnamon 1/4 tablespoon ground cardamom 1/2 cup vegetable oil 1/2 cup chopped walnuts 1/2 cup raisins 2 apples, sliced and unpeeled 1/2 cup sugar, caramelized with 1 tablespoon butter and 1/4 cup milk

Preparation method:

Whisk the eggs and sugar with the vanilla and lemon zest. When the mixture becomes creamy and the sugar dissolves, add the juice and oil and whisk. Add the oats and stir with a spoon, then add the ground cardamom and nutmeg and stir. Next, add the flour with the baking powder and cinnamon after sifting them, and stir. Finally, add the walnuts and raisins and mix. Place 1/2 cup sugar in a pan over low heat until the sugar caramelizes, then add the butter and stir. Finally, add the milk and stir until the sugar dissolves again (it will clump when the milk is added) and you get a smooth sauce with no lumps. In a cake pan (or mold) greased with tahini or oil, pour this mixture, meaning the caramel sauce, into the bottom. Arrange the apple slices over the caramel, then pour in the cake batter. You can spoon it in so the arranged apple slices do not move out of place. Place the cake pan in the preheated oven at 180°C for 45 to 50 minutes, depending on the oven. Test the cake with a wooden skewer or the tip of a knife before removing it from the oven. Let it cool to room temperature, then invert it onto a serving plate.
