Fallen lemon blossoms from under your trees can be used to make the most delicious jam, perfect for decorating desserts, especially Ramadan sweets, or even eaten with bread :)

Ingredients

  • 300 grams lemon blossoms
  • Water for boiling
  • Syrup:
  • 3 cups sugar
  • 1 1/2 cups water
  • 2 tablespoons orange blossom water or rose water
  • 2 tablespoons red food coloring
  • 2 tablespoons lemon juice

Method

  1. Pluck the blossoms to get the petals.
  2. Wash the petals by soaking them in a bowl full of water. After some time, lift them from the soaking water into a colander. Repeat if necessary to remove all dirt and sand.
  3. Fill a pot with water and place it on the heat until the water boils. Boil the blossoms for 7 minutes, then drain them from the water.

  4. Meanwhile, prepare the syrup by placing the sugar and water in a pot over the heat.
  5. Let them simmer over medium heat until they come to a boil, without stirring at all...
  6. After 15 minutes of placing the pot over low heat, the syrup will begin to boil. At that point, add the lemon juice, then the food coloring, orange blossom water, and rose water. Stir gently, then add the previously boiled and drained lemon blossoms...

  7. Leave the mixture on low heat for about 10 more minutes...
  8. When the syrup thickens and the blossom color turns red, turn off the heat...
  9. Pack the jam into sterilized, tightly sealed glass jars and close them well with the lid. The jam should cool to room temperature before using.
  10. After opening the jar, keep it in the refrigerator.
