Ingredients:

First Layer

1 1/2 cups fine semolina

1 cup syrup

2 teaspoons ghee or unsalted butter

1/2 cup water

Custard Layer

1 1/2 cups milk

4 tablespoons sugar

2 tablespoons cornstarch

2 tablespoons flour

1 can ready-made cream (qeshta)

5 cardamom pods

1 tablespoon orange blossom water and 1 tablespoon rose water

Toasted nuts for garnish

Preparation:

Place the semolina and the ghee or butter on the heat and cook until the semolina takes on a little color. Then add the syrup and water and stir until it thickens and the semolina is cooked. This will take about 5 minutes. Spread the semolina as the first layer on a serving dish.

To prepare the custard:

Add the sugar, flour, starch, and crushed cardamom to the milk while cold. Mix well to prevent lumps, then place over low heat and keep stirring until it boils. Add the cream and the orange blossom and rose waters and let it boil for about a minute, then pour over the semolina layer. Chill in the fridge until cold and garnish with nuts before serving.
