Mini pancakes... a light, clean recipe and, to say the least, absolutely delightful... kids will definitely love this way of serving them

Ingredients

  • 1 cup white flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • A pinch of salt (optional)
  • 2 tablespoons powdered sugar
  • 1 egg
  • 2 tablespoons vegetable oil

Method

  1. Mix all the ingredients except the flour... then add the flour and stir until you get a slightly runny, smooth batter.
  2. Let it rest for 15 minutes before starting to bake or fry.
    Timers: 15 min
  3. On a griddle or nonstick pan over low to medium heat, pour the batter into small circles of the desired size... you can use a tablespoon for pouring.
  4. Flip the circles on both sides until cooked... they will need no more than 2 minutes per side.
    Timers: 2 min
  5. Arrange the mini pancakes on a plate or thread them onto wooden skewers... and serve as desired with condensed milk, chocolate sauce, or honey... You can also skewer pieces of fruit with them, حسب what is available and preferred.
