Recipe story

Milk and orange muhallebi — a nice change. Although the classic muhallebi is already very tasty, adding refreshing orange flavor gives it a lovely twist.

Ingredients

  • 4 cups fresh orange juice
  • 6 cups liquid milk
  • 1½ cups sugar
  • 10 tablespoons cornstarch (cornflour)
  • ½ teaspoon orange blossom water
  • 1 teaspoon rose water

Method

  1. First, put 5 cups of the milk in a pot over medium heat with 1 cup of the sugar and stir until the sugar dissolves.
  2. In a bowl, put the remaining 1 cup of milk and add 6 tablespoons of the cornstarch, whisk it well and set aside.
  3. When the milk starts to boil, gradually add the cup of milk mixed with the cornstarch while stirring continuously until the milk thickens.
  4. Turn off the heat, then add ½ teaspoon rose water and ¼ teaspoon orange blossom water and stir.
  5. Pour the milk muhallebi into serving cups or dishes, filling them only halfway to leave room for the orange mixture later, and set aside.
  6. Put 3 cups of orange juice in a pot over the stove with ½ cup of sugar and heat, stirring well over medium heat.
  7. Mix 4 tablespoons of cornstarch with the remaining cup of orange juice and stir well.
  8. When the orange juice comes to a boil, add the cup of orange juice mixed with cornstarch and stir well until the orange mixture thickens.
  9. Turn off the heat and add ½ teaspoon rose water and ¼ teaspoon orange blossom water and stir.
  10. Pour the orange mixture over the milk muhallebi that has cooled to room temperature so the two layers do not blend.
  11. Let the milk and orange muhallebi cool at room temperature before refrigerating.
  12. Note: Strain the orange juice to remove pulp before heating it or before mixing the remaining cup with the cornstarch.
