Green lime mahalabia!! Have you heard of it before? We doubt it... Our recipe is inventive and super refreshing

Ingredients

  • 6 cups liquid milk
  • 1 1/2 cups sugar
  • Zest of 4 limes
  • 8 limes
  • 1 teaspoon liquid vanilla
  • 6 tablespoons cornstarch (for the milk)
  • 4 tablespoons cornstarch (for the lime juice)
  • 1 tablespoon orange blossom water
  • 1 tablespoon rose water
  • 3 drops green food coloring

Method

  1. Start by preparing the milk mahalabia. Put the milk over medium heat in a pot with 1 cup of the sugar and the vanilla.
  2. Stir, then add the zest of 2 limes and mix.
  3. In a small bowl, mix the 6 tablespoons cornstarch with 1/2 cup water until smooth. When the milk is hot, gradually add the dissolved cornstarch while stirring constantly for about 5 minutes until the mahalabia thickens and is ready.

  4. Divide it into serving cups or glasses. When it has cooled, place them in the refrigerator to chill for 1 hour.

  5. In a new pot, put the juice of 8 limes (about 4 cups) with the zest of 2 limes, 1/2 cup sugar (or to taste), plus 1 to 1 1/2 cups water and stir well.
  6. Place the pot over low heat, add the green food coloring, and stir well.
  7. When the juice warms, dissolve the 4 tablespoons cornstarch in 1/4 cup water and add it to the pot, stirring well. Cook for 3 to 5 minutes until the mixture thickens.

  8. Turn off the heat, add 1 tablespoon orange blossom water and 1 tablespoon rose water, and stir well.
  9. Pour the lime mixture over the chilled milk mahalabia.
  10. Refrigerate the green lime mahalabia for at least 2 hours before serving.
