Pistachio Madlouqa — one of the most delicious Ramadan sweets, especially when homemade.

Ingredients

  • 500 g fine shredded dough (furk)
  • 2 tablespoons ghee (clarified butter)
  • 1/3 cup sugar
  • about 1/2 cup sugar syrup (qattar/shirah)
  • 1/2 cup ground Aleppo pistachios
  • prepared clotted cream (qishta), chilled

Method

  1. Toss the kataifi (shredded pastry) with the ghee over low heat until it absorbs the fat.
  2. Let it cool slightly, then gradually add the ground pistachios, sugar, and sugar syrup (qatir) and knead until you have a very firm dough.
  3. Spread it in the baking pan and evenly top it with cold qareesha-style clotted cream.
  4. Garnish with fried nuts and other toppings as desired and serve with sugar syrup (qatir).
