Pistachio Madlouqa — one of the most delicious Ramadan sweets, especially when homemade.
Ingredients
- 500 g fine shredded dough (furk)
- 2 tablespoons ghee (clarified butter)
- 1/3 cup sugar
- about 1/2 cup sugar syrup (qattar/shirah)
- 1/2 cup ground Aleppo pistachios
- prepared clotted cream (qishta), chilled

Method
- Toss the kataifi (shredded pastry) with the ghee over low heat until it absorbs the fat.
- Let it cool slightly, then gradually add the ground pistachios, sugar, and sugar syrup (qatir) and knead until you have a very firm dough.
- Spread it in the baking pan and evenly top it with cold qareesha-style clotted cream.
- Garnish with fried nuts and other toppings as desired and serve with sugar syrup (qatir).
