Ingredients

Start here, then move straight into the method.

  • 2 and a half cups flour
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup low-fat milk
  • 1 cup pitted dates
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 4 eggs
  • a dash of vanilla extract
  • 1/2 cup chopped walnuts

Method

Follow the cooking sequence without leaving the page.

  1. Leave the pitted dates soaked in the boiling water and baking soda for about an hour.
  2. Bring the date mixture to a boil for a few minutes over the heat, then set it aside.
  3. Toast the walnuts with 1 tablespoon of flour over low heat for a few minutes, then set them aside.
  4. Beat the eggs well and add a dash of vanilla.
  5. Add the sugar and continue beating; add the oil and continue beating until the mixture is smooth and the sugar dissolves.
  6. Add the dates at this stage and continue beating.
  7. Begin adding the flour alternately with the baking powder.
  8. Also add the milk alternating with the flour until the mixture is homogeneous.
  9. Add the toasted walnuts which we had set aside.
  10. Pour the cake batter into an oven pan lightly greased with a little butter or tahini.
  11. Place the date cake in the preheated oven for about 40 minutes at 180°C, or until the cake is well cooked; you can test doneness by inserting a wooden skewer into the cake—if it comes out dry, the cake is done.
    Timers: 40 min
  12. When the cake is baked and browned, remove it from the oven and set it aside to cool before slicing and serving; it can be decorated with powdered sugar and whole walnut halves.
  13. We hope you like it and that you'll try it :)
