Ingredients

  • 15 plain biscuits
  • 4 tablespoons butter
  • 1 tablespoon sugar
  • 1 cup whipping cream
  • 1/2 cup sweetened condensed milk
  • Juice of 2 lemons
  • Zest of 2 yellow lemons and zest of 1 green lemon (lime)

Method

  1. Crush the biscuits in a food processor. Add the sugar and butter to the biscuits and mix well.
  2. Press the biscuit mixture into a tart pan, after greasing it lightly with butter.
  3. Bake in a preheated oven for about 15 minutes maximum; ideally, leave it in for only about 10 minutes.
    Timers: 15 min, 10 min
  4. Meanwhile, mix the cream with the sweetened condensed milk.
  5. Add the lemon juice and a little zest, and continue mixing.
  6. Once the baked biscuit base has cooled, pour the cream mixture over it. Garnish with the yellow lemon zest and green lemon zest.
  7. Place it in the fridge to set slightly until serving time.
