Ingredients

  • 4 cups flour
  • 2 eggs
  • 1/2 cup fresh lemon orange juice
  • 1/2 cup oil
  • 1/2 cup sugar
  • 2 tablespoons tahini
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • Zest of 1 lemon orange
  • 1 cup powdered sugar for decoration

Method

  1. Place the sugar, oil, lemon orange juice, eggs, orange zest, vanilla, and tahini together in a bowl and whisk well until the sugar dissolves and the mixture is combined.
  2. Add the flour and baking powder and knead until you get a soft dough that does not stick to the hands.
  3. Shape the dough into walnut-sized balls, dip them in the powdered sugar, then press each one slightly so it takes a round shape.
  4. Arrange the cookies on a baking tray, lining it with baking paper if desired.
  5. Place the tray on the middle rack of the oven and bake the lemon orange cookies at 160°C until the bottoms turn a light red color.
  6. Brown the cookies from the top for no more than 3 minutes.

  7. Serve the cookies at room temperature.
