Lazy cake, or the lazy cake, is one of the first desserts we think of when we want an easy chocolatey treat, especially one that doesn’t require an oven. Make it without condensed milk for a lighter result.
Ingredients
- 2 packets plain biscuits
- 3 tablespoons cocoa
- 1 tablespoon instant coffee
- 4 tablespoons sugar
- 3/4 cup liquid milk
- 100 g butter
- 1/2 cup raisins (optional)
- 1/4 cup almonds, sliced lengthwise (optional)
Method
- Break the biscuits into rough pieces and place them in a deep bowl.
- In a pan over the heat, add the butter, cocoa, and instant coffee and stir until the butter melts and the ingredients are well combined.
- Add the sugar and milk and stir until the sugar dissolves. Turn off the heat when it starts to boil.
- Once this mixture has cooled, pour it over the biscuits (and the nuts and raisins, if using) and mix well.
- Lay out a sheet of food-safe plastic wrap and spread the mixture lengthwise, then shape it into a roll using the plastic wrap.
- Place the lazy cake in the refrigerator for several hours, then slice and serve.
