Ingredients

  • 4 cups milk
  • 1 cup semolina
  • 1 tablespoon orange blossom water
  • 1 tablespoon rose water
  • Small packet of mastic or a pinch (optional)
  • 2 tablespoons sugar
  • 1 container Qaimar cream (qishta)
  • Desiccated coconut and shelled pistachios for garnish
  • Sugar syrup (shira) or honey

Method

  1. Put the milk, semolina and sugar in a pot over the heat and stir occasionally until the mixture boils and thickens.
  2. Add the rose water, orange blossom water and ground mastic with the sugar, and stir well.
  3. Pour the mixture into a tray and smooth the surface until you have an even, smooth top.
  4. Let Layali Lubnan cool slightly to room temperature, then spread the clotted cream (ashta) over the top and smooth it as well.
  5. Garnish Layali Lubnan with desiccated coconut and pistachios, and serve chilled from the refrigerator with syrup or honey.
