Ingredients:

2 cups fine bulgur

\r\n

400 g finely ground kibbeh meat

\r\n

3 cups water

\r\n

1/4 cup kamouna ground

\r\n \r\n

Kamouna mixture:

\r\n

1 onion

\r\n

mint leaves

\r\n

marjoram

\r\n

1 1/2 teaspoons cumin

\r\n

1 tablespoon red sweet pepper paste

\r\n

3 tablespoons fine bulgur

\r\n \r\n

The filling:

\r\n

Fry a large chopped onion with a bit of chopped walnuts and a spoon of red pepper paste.

\r\n

Add about 250 g of ground meat with a touch of cinnamon, sweet and black peppers, salt, and a spoonful of pomegranate molasses.

\r\n \r\n

Preparation:

\r\n

Soak bulgur and Kamouna in water for about half an hour...

\r\n

Knead the bulgur by hand until soft; add a little water if needed.

\r\n

Gradually add the minced meat and knead until a cohesive, soft Kibbeh dough forms.

\r\n

Divide the dough in two; grease the pan with olive oil and spread the first half evenly. Add the filling and spread it. Place the second half between two sheets of plastic and roll to fit the pan. Peel away the top sheet and flip the dough onto the filling, removing the plastic.

\r\n

Cut the kibbeh as desired and drizzle with a little olive oil on top. Place the tray in a preheated oven at 180°C on the middle rack...

When the sides brown, switch off from the bottom and turn on the top to brown well...

\r\n \r\n

Note:

These quantities are for a tray with a diameter of about 35 cm.
