Mabrusha cake is one of those easy recipes made with ingredients you already have at home! If you’re in the mood for something sweet and don’t want to go to much trouble... you can prepare the tastiest, most delicious cake right away

Ingredients:

4 cups flour

1 cup powdered sugar

2 eggs

1 cup butter, 200 g at room temperature

1 teaspoon baking powder

vanilla

1 tablespoon grated lemon zest - optional

Filling:

Jam, as desired (apricot, strawberry, or whatever is available)

Method:

Beat the butter with the powdered sugar... it’s best if the butter is soft, meaning it has been left out of the fridge beforehand.
Add the eggs, vanilla, and lemon zest and mix, then add the flour and baking powder in batches, kneading gently.
Spread half the dough in a nonstick baking tray.... Roll it out well because it will rise while baking, so it’s better if it is thin so it won’t end up too thick later.
Spread it with a generous layer of jam... then grate the remaining half of the dough over the jam to form the top layer.
Bake in a hot oven on the middle rack at 180°C until the edges turn golden; by then it will be cooked from below.
Turn on the top heat so the mabrusha browns on top as well.
Let it cool completely, then cut into squares or as desired and serve.
