Yogurt is a must-have in the fridge. It’s useful to learn how to make it at home. The steps are simple, but precise. Here is the method in detail.

Ingredients

  • 1 liter whole milk, or 2 cups full-fat powdered milk + 1 liter water
  • 1/2 tablespoon sugar
  • 1/2 cup yogurt at room temperature, or 4 tablespoons laban starter (rouba)

Method

  1. Put the milk in a pot with the sugar and mix well while still cold.
  2. Place it over low heat, stirring with a whisk from time to time.
  3. When the milk boils, turn off the heat and let it cool until its temperature reaches between 40 and 42°C. If you do not have a thermometer, check the warm milk as follows: once it has cooled slightly, put your finger in it. If you can tolerate the heat for 10 seconds, the milk is at the right temperature.
  4. Place the starter yogurt in a small bowl, add just half a cup of the warm milk at 40 to 42°C as mentioned, and mix very well.
  5. Add it to the warm milk in the pot or in a suitable container for setting yogurt, such as a clay pot or plastic bucket, and whisk well in a circular motion until combined.
  6. Cover the container with a lid, wrap it on all sides with a thick winter blanket, and leave it for a full 7 hours without moving or shaking it at all.

  7. After the time has passed, remove the blanket and lid, and you will find that the milk has turned into yogurt.
  8. Place the yogurt in the refrigerator for at least 4 hours so it cools well before serving.
