Vegetable rice.. a recipe we need alongside many dishes, and it can be served with salad

2 cups rice

3 cups boiling water

onion

garlic

chicken bouillon cube

Seasonings: bay leaf - cinnamon sticks - cardamom pods - cloves

2 tomatoes

2 grated carrots

hot pepper, to taste

Spices: cumin - turmeric - curry

salt

Wash the rice well and soak it in hot water for half an hour. In a pot, heat a little oil and sauté the chopped onion and garlic.
When they soften, add the bouillon cube and the seasonings and stir well.
Add the grated carrots and stir until softened, then add the peeled, chopped tomatoes, hot pepper, spices, and salt, and stir.
Then add the boiling water and the drained rice.
Leave over high heat until the water evaporates, without stirring. When the water level reaches the rice and the top looks dry, reduce the heat and cover the pot.
Leave for 15 minutes or until the vegetable rice is cooked.
