Fattoush is one of the tastiest and most famous Lebanese salads. Some people like it with lemon, while others love it with pomegranate molasses. You can also add a little vinegar. How do you like it?

Ingredients

  • Half a bunch of mint
  • Half a bunch of purslane
  • 3 radishes
  • 2 cucumbers
  • 1 medium sweet green pepper
  • 2 tomatoes
  • Quarter bunch parsley
  • 7 large lettuce leaves
  • 2 spring onions, with the greens
  • 1 medium carrot
  • Dressing:
  • 1 teaspoon salt, or to taste
  • 2 tablespoons olive oil
  • A pinch of sumac
  • 1/4 cup lemon juice
  • 2 tablespoons white vinegar
  • 1 tablespoon pomegranate molasses

Method

  1. Wash all the vegetables and let them drain well
  2. Pick the mint leaves and purslane from the stems; do not chop them
  3. Dice the radishes and green pepper into small cubes, finely chop the parsley and spring onions, and roughly chop the lettuce, cucumbers, and tomatoes. Grate the carrot
  4. Place all the vegetables in one bowl, add the dressing ingredients, and mix
  5. Serve the fattoush with fried bread or bread toasted in the oven
