Ingredients
- Half a bunch of mint
- Half a bunch of purslane
- 3 radishes
- 2 cucumbers
- 1 medium sweet green pepper
- 2 tomatoes
- Quarter bunch parsley
- 7 large lettuce leaves
- 2 spring onions, with the greens
- 1 medium carrot
- Dressing:
- 1 teaspoon salt, or to taste
- 2 tablespoons olive oil
- A pinch of sumac
- 1/4 cup lemon juice
- 2 tablespoons white vinegar
- 1 tablespoon pomegranate molasses
Method
- Wash all the vegetables and let them drain well
- Pick the mint leaves and purslane from the stems; do not chop them
- Dice the radishes and green pepper into small cubes, finely chop the parsley and spring onions, and roughly chop the lettuce, cucumbers, and tomatoes. Grate the carrot
- Place all the vegetables in one bowl, add the dressing ingredients, and mix
- Serve the fattoush with fried bread or bread toasted in the oven
