Ingredients

  • 1 kilogram semolina
  • 200 grams butter
  • 1 cup vegetable oil
  • 1 teaspoon mahlab
  • 1 teaspoon mastic
  • A pinch of nutmeg
  • 2 tablespoons ground anise
  • 1 tablespoon ka'ek spice or spice mix
  • 4 tablespoons sugar
  • Date Filling:
  • Knead the dates with vegetable oil, ka'ek spice, ground anise, and a pinch of fine cinnamon.

Method

  1. Combine all the ingredients together and mix well until they are fully absorbed, then leave them aside overnight.
  2. The next day, knead the mixture with warm milk. Use as much as the dough needs.
  3. Add the milk slowly and gradually, because the mixture will absorb it quickly. Continue adding warm milk until you have a smooth, soft, and cohesive dough.
  4. Let the dough rest for 10 minutes before starting to shape and fill it as desired.
