  • 1 kilogram Akkawi cheese (sweet)
  • 4 cups Egyptian rice
  • 6 cups sugar
  • 8 cups water for boiling the rice
  • 4 tablespoons orange blossom water
  • 4 tablespoons rose water
  • 1/2 teaspoon ground mahleb with a pinch of sugar
  • 5/4 teaspoon? content removed for clarity

Method

  1. Wash the rice and soak it in water for at least two hours. Drain the rice, then place it in a pot on the stove with water, using 2 cups of water for each cup of rice. Stir the rice from time to time until it is cooked. When the rice is cooked, let it cool, then put it with its water in an electric blender and grind it until you obtain a sticky mixture. Return it to the pot and add mahlab and sugar, and leave it over low heat for about a quarter of an hour, stirring until the sugar dissolves completely.
  2. Remove the mixture from the heat and add the cheese cut into small pieces, stirring until it melts. Add rose water and orange blossom water and stir well.
  3. Pour the rice halva into the serving dish and garnish it with pistachios and zahr al-zafir.
  4. Serve the rice halva cold from the refrigerator.
