How to Make Othmaliyeh or Basma Dessert
Basma or Othmaliyeh... two layers of Othmaliyeh vermicelli filled with fresh qashta (clotted cream). And of course, don't forget the pistachios, which add richness and flavor. A very special dessert, served with atr (sugar syrup).

Basma or Othmaliyeh... a very popular dessert. Here's how to make it the traditional way.
Ingredients
- Half a kilo Othmaliyeh (Basma) vermicelli
- Corn oil for frying
- Fresh qashta (clotted cream)
- Ground pistachios
- Sugar syrup (qatr) or shireh for serving
Method
- Place half of the dough or Basma vermicelli in a baking pan and press it with the palm of your hand to arrange and compact the vermicelli
- Immerse the layer in oil
- Place the pan on the stove and rotate it constantly until the layer turns golden
- Drain it well from the oil and transfer it to a wide serving plate
- Repeat the same process in the same pan to obtain a second piece of the same size, but leave the second piece in the pan after draining it well
- When the vermicelli has cooled well, spread the cold qashta over the first layer and sprinkle a little ground pistachios
- Very carefully flip the second piece from the pan over the first layer
- Garnish the top with qashta and pistachios
- Serve it with sugar syrup (qatr) or shireh
