1½ cups fine semolina

1 tsp baking powder

½ tsp baking soda

½ cup sugar

100 g melted butter (about just under ½ cup)

½ cup milk or yogurt

1 tbsp orange blossom water

Cold sugar syrup (shira) for soaking the namoura

Syrup (Qatr):

1 cup sugar

½ cup water

A squeeze of lemon

1 tsp orange blossom water

In a bowl, combine the semolina, baking powder, baking soda, and sugar; mix.
Add the melted butter and rub with your hands until the mixture has absorbed all the butter.
Add the milk or yogurt and the orange blossom water and knead well.
Spread the namoura mixture into a baking tray and smooth the surface.
Cover the tray with a clean kitchen towel and let it rest for 1 hour.
Preheat the oven to 200°C and bake the namoura for about 20 minutes or until the edges are golden.
Finish browning the tray for about 10 minutes.
Pour the cold syrup over the hot cake.
Let it cool completely to room temperature before serving.

Syrup method:

Place all the syrup ingredients together and stir until you reach the desired syrup consistency — boil the syrup for about 7 minutes.
Let the syrup cool, and pour the cold syrup over the namoura tray as soon as it comes out of the oven.
