Ingredients
- 2 cups flour
- 2 tablespoons cornstarch
- 2 tablespoons syrup
- 1 tablespoon sugar
- 1 tablespoon yeast
- About 1 1/2 cups lukewarm water
- Syrup:
- 2 cups sugar
- 1 cup water
- A squeeze of lemon juice
- 2 tablespoons rose water
Method
- Combine all the ingredients together, then add the water and mix to form a soft, elastic dough. Beat it well with a hand whisk.
- Prepare the syrup: put all the ingredients in a pot over the heat. After it boils, let it simmer for 8 minutes on low heat, then turn off the heat. The syrup should be thick so the doughnuts stay crisp.Timers: 8 min
- Meanwhile, the dough should rest for half an hour or more until it rises, then beat it with the whisk to release the air.
- For the first fry, shape each piece into a small ball and place it directly into the hot, deep oil. Fry it halfway, then remove it from the oil.
- Immediately fry it a second time until the pieces turn golden brown.
- Transfer them from the oil straight into the cold syrup (at room temperature).
- After a minute, remove them from the syrup, drain, and serve.
