Luqmat al-Qadi... a homemade recipe for one of the tastiest and easiest desserts. You always ask for the method, and here we are sharing it properly.

Ingredients

  • 2 cups flour
  • 2 tablespoons cornstarch
  • 2 tablespoons syrup
  • 1 tablespoon sugar
  • 1 tablespoon yeast
  • About 1 1/2 cups lukewarm water
  • Syrup:
  • 2 cups sugar
  • 1 cup water
  • A squeeze of lemon juice
  • 2 tablespoons rose water

Method

  1. Combine all the ingredients together, then add the water and mix to form a soft, elastic dough. Beat it well with a hand whisk.
  2. Prepare the syrup: put all the ingredients in a pot over the heat. After it boils, let it simmer for 8 minutes on low heat, then turn off the heat. The syrup should be thick so the doughnuts stay crisp.

  3. Meanwhile, the dough should rest for half an hour or more until it rises, then beat it with the whisk to release the air.
  4. For the first fry, shape each piece into a small ball and place it directly into the hot, deep oil. Fry it halfway, then remove it from the oil.
  5. Immediately fry it a second time until the pieces turn golden brown.
  6. Transfer them from the oil straight into the cold syrup (at room temperature).
  7. After a minute, remove them from the syrup, drain, and serve.
