Ingredients:

A whole lamb or a lamb leg

Half a cup yogurt

1 cup vegetable oil

1 tablespoon cardamom

1 tablespoon nutmeg

1 tablespoon ground cinnamon

1 tablespoon finely ground ginger

2 tablespoons paprika or sweet red pepper

Salt

Half a cup orange juice

Lemon juice

Bay leaves

Cinnamon stick

Cloves

4 cloves garlic

Rosemary

2 carrots

2 celery stalks

Method:

In a deep bowl, mix the vegetable oil. The amount of oil depends on the size of the lamb, or if you are using only the leg... it can be one cup or half a cup of oil.

Mix the oil with the cardamom, ground cinnamon, ground ginger, nutmeg, paprika, yogurt, and the orange juice mixed with the lemon juice.

Add salt, cloves, and bay leaves to the mixture. Mix the ingredients well and rub the meat with it the night before cooking it in the oven. Place the garlic cloves, celery, rosemary, and carrots in the folds of the lamb and stuff them inside the lamb.

The next day, place the meat in the oven to cook. The cooking time varies depending on the size of the lamb and whether it is only a leg... cooking time is between 2 and a half hours to 5 hours. Add a little water to the tray with the meat, and whenever the water evaporates, add more until the meat is fully cooked...
