Ingredients:

1 1/2 cups water 125 g butter 1 cup + 1 tablespoon flour 4 eggs Éclair filling (crème pâtissière): 2 eggs 1 teaspoon vanilla 1 teaspoon lemon zest 3/4 cup sugar 1 tablespoon cornstarch 3 tablespoons flour 3 cups liquid milk or 6 tablespoons powdered milk dissolved in 3 cups water

Preparation:

In a pot over the heat, start making the dough. Add 1 1/2 cups water and wait until it boils.
Add the butter to the boiling water, and once it has completely melted, lower the heat as much as possible.
Gradually add the flour and stir as you do until you get a soft dough.
Turn off the heat and let the dough sit for about 15 minutes to cool slightly before shaping.
Add the eggs one at a time, whisking continuously, until you get a smooth dough that can be piped with a pastry bag.
Grease a baking tray with a little oil, place the éclair dough in a piping bag, and shape the pieces lengthwise, about two fingers wide.
Put the tray in the oven with only the bottom heat on, and place it in the middle of the oven. When the pieces puff up, turn on the top heat and brown them lightly.
Watch the éclairs closely because they do not need much time. Once they are lightly browned, turn off the oven.
Leave them in the oven for 15 minutes before opening it so they do not collapse if the temperature changes suddenly.
Meanwhile, prepare the filling. In a bowl, mix the eggs, vanilla, lemon zest, and sugar, then add the cornstarch and flour and mix well.
Add the milk last and mix very well, then place the mixture over the heat.
Keep stirring while it is on the heat so the mixture does not clump.
When it boils and thickens, turn off the heat.
Pour the cream into a wide dish and cover it with plastic wrap so it can cool.
Leave it in the fridge until it cools well before opening the éclairs from the side and filling them. You can also pierce the éclairs and fill them with crème pâtissière using a pastry bag.
Dip one side of the éclairs in melted chocolate or decorate as desired.
