Ingredients:

5 eggs

\r\n

1 cup vegetable oil

\r\n

2 cups sugar

\r\n

1 cup milk

\r\n

3 cups flour

\r\n

2 heaping tablespoons baking powder

\r\n

1 tablespoon vanilla

\r\n

A pinch of baking soda

\r\n

1 tablespoon vinegar

\r\n

1 large cup of dried fruit

\r\n

Method:

\r\n

Beat eggs, vanilla, sugar, and oil until a smooth batter forms. Sift in the flour with the baking powder and mix well, then add the baking soda and vinegar.

\r\n

Combine baking soda and vinegar first until foamy, then add to the cake batter; the vinegar and baking soda help make the cake tender and rise well.

\r\n

Grease the pan with flour and a touch of oil or tahini, pour half the batter in the pan, sprinkle with dried fruit, then top with the remaining batter and bake on the middle rack at 180°C for about one hour. Do not open the oven during baking.

Note:

\r\n

After the cake is done, leave it in the oven without opening it for 10 minutes.

\r\n

Important tip: before adding dried fruit, brush them with a little oil and dust with flour; then place half the batter in the pan, add the dried fruit to the center, then top with the remaining batter and bake.
