Homemade croissants with a tried-and-true, successful recipe... definitely much cleaner than store-bought, and the kids will enjoy them even more because they were made by mom :)

Ingredients

  • 9 cups flour
  • 3 tablespoons sugar
  • 2 tablespoons yeast
  • 3 cups lukewarm water
  • 1/3 cup yogurt
  • 3 tablespoons powdered milk
  • 100 grams butter
  • 1/3 cup oil
  • 1 teaspoon salt
  • Fillings:
  • Mixed cheese
  • or
  • za'atar and oil
  • chocolate
  • For the top:
  • 1 tablespoon Nescafe + 1 tablespoon milk + 1 tablespoon sugar, dissolved in a little water
  • soft butter and sesame seeds

Method

  1. First, place three cups of flour with the sugar, yeast, powdered milk and lukewarm water and mix well.
  2. Leave for 15 minutes until the yeast proofs.
  3. Then add the oil and milk and the remaining flour gradually, kneading until the dough becomes cohesive.
  4. Finally add the softened butter at room temperature and knead again for 10 minutes (not less) until the dough is smooth.
  5. Divide it into three pieces and roll each on a floured surface with a rolling pin to form a circular sheet.
  6. Cut each sheet into 8 equal lengthwise pieces.
  7. Place the desired filling at the end of each piece and roll it up.
  8. Leave the pieces on the baking tray for two hours or more to proof again and double in size.
  9. Brush the tops with butter and sprinkle sesame seeds or as desired; you can brush the tops with a mixture of instant coffee and milk.
  10. Bake the croissants in a preheated oven at moderate temperature until done, browning the tops slightly.
  11. Serve the croissants immediately or cold at room temperature.
