Deep-fried awamat are one of the tastiest Arab sweets and are also among the most economical. Be warned: they are rich and soaked in syrup, but their sweetness and crunch are enough to ease the guilt :)

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1 tablespoon dry yeast
  • 2 tablespoons sugar
  • 2 tablespoons vegetable oil
  • a pinch of salt
  • 1/2 cup plain yogurt at room temperature
  • 1 cup warm water
  • sugar syrup (qatr or shireh) for dipping the awamat

Method

  1. Mix all the dry ingredients together.
  2. Add the yogurt, water, and oil, and knead by hand.
  3. Let the dough rest for two hours.
  4. Shape the awamat using a tablespoon.
  5. Fry them immediately in hot, deep oil—partially fry them in the first stage.
  6. Remove them from the oil.
  7. After a short while, fry them a second time.
  8. Let them drain from the oil, then dip them in cold syrup at room temperature.
  9. Lift them from the syrup, drain them a little, then serve.
