Arabic booza... homemade as usual, with simple ingredients and a wonderful result!

Ingredients

  • 4 cups liquid milk
  • or
  • 4 cups cold water + 1 cup milk powder
  • 1 tablespoon cornstarch
  • 2 1/2 cups sugar
  • 1 cup sweetened condensed milk - optional
  • 1 packet ready-made sahlab, or 4 tablespoons sahlab powder + 1 teaspoon vanilla + 1 tablespoon orange blossom water + 2 crushed mastic beads
  • 1 container qashta cream
  • 1 packet whipped cream powder or 1 cup liquid whipping cream for desserts
  • Ground pistachios - as desired

Method

  1. Mix the milk and cornstarch cold, then add the sahlab (salep) and sugar and stir well
  2. Put the mixture on the heat and add the sweetened condensed milk, continuing to stir until the mixture thickens and becomes heavy
  3. Pour it into a bowl and leave it aside to cool
  4. Add the packet of cream on top after it has cooled and whisk well, then add the clotted cream and whisk as well
  5. Add the crushed pistachios over the ice cream and mix .. and leave a little crushed pistachio aside for garnish when serving
  6. Pour the mixture into a loaf pan or any other airtight dish and leave it about 8 hours at least in the freezer to freeze well before serving.. or you can pour the ice cream mixture onto a tray lined with plastic, place the tray in the freezer for some time, then roll the ice cream when it firms like a roll and leave it in the freezer for at least 8 hours
