Method
- Cover the peas with water and boil them with 1 teaspoon of sugar so they keep their green color. Cook until tender; canned peas can also be used.
- Soak the rice when you start preparing the filling.
- Sauté the finely chopped onion in a little oil until softened, then add the ground meat and stir until its color changes.
- Add the spices, canned corn, and salt to the meat, stir, then turn off the heat.
- Drain the rice, then add it to the sauté with the ghee and the amount of water the rice needs. Once it comes to a boil, reduce the heat and cover the pot until the rice is cooked.
- When the rice is done, add the peas after draining them very well, along with the fried nuts, and mix everything together.
- Let the rice and peas cool.
- Meanwhile, prepare the dough: add the salt to the flour, then the oil, and rub everything together, then knead with warm water.
- Let the dough rest for about half an hour.
- Once the dough has rested, divide it into 6 balls.
- Let the balls rest again, then roll each one out by hand after sprinkling starch on the work surface.
- Sprinkle the surfaces of the dough sheets with starch as well, and stack them on top of one another as you finish each one.
- Roll them all together to get one large sheet, then separate the ozi layers from one another.
- Roll out each sheet of ozi dough into a round, place some filling inside, and seal the dough together from all sides to form a large ball resembling a pouch.
- Arrange the ozi balls in a baking tray greased with ghee, and brush the tops with ghee as well.
- Place the tray in a preheated oven until golden on top and bottom.
