Ingredients
- 2 cups water
- 1 cup fine semolina
- 1 cup sugar
- 3 cups mozzarella cheese
- or
- Mozzarella with sweetened Czech curds
- Sugar syrup or rosewater syrup for stretching and serving

Method
- Put the water in a pot over the heat with the sugar and stir until it dissolves well.
- After boiling, add the semolina and stir quickly, then leave it over low heat to cook, stirring continuously.
- Add the cheese and continue stirring until it melts, pulling it upward while stirring until you get a homogeneous dough.
- Roll the halawet el jibn with a rolling pin on clingfilm or a piece of marble greased with syrup.
- When the halawa cools, fill it and cut it as desired.
- Garnish the halawet el jibn with pistachios and serve it cold with syrup (shira).
