Walnut rolls... a dessert recipe from Germany, and its German name is Nusscheke ...

This dough works for a number of German sweets recipes! We hope you’ll love this super tasty dessert. Don’t miss it.

Ingredients:

Dough:

1 kilo all-purpose flour

2 eggs

150 g buttermilk

1 teaspoon salt

1 very small teaspoon baking powder

1 tablespoon melted butter

1/4 cup vegetable oil

2 tablespoons vinegar

1 tablespoon instant yeast

6 tablespoons sugar

Warm milk, as needed for the dough

Filling:

Butter for brushing the dough

250 g ground walnuts

100 g peeled almonds, finely ground

1 tablespoon cinnamon

2 tablespoons granulated sugar

3 tablespoons powdered sugar

For the topping:

Apricot jam

Sugar icing (a little powdered sugar + 3 tablespoons liquid milk or as needed + a squeeze of lemon)

Preparation:

First... in a mixing bowl, add the flour, salt, baking powder, and five tablespoons of sugar.
Mix them, then make a well in the center... on the side, mix 1 tablespoon sugar, the yeast, and half a cup of warm milk, then pour it into the well and let it activate for about 5 minutes.
After the time has passed... beat the eggs well and add them to the flour bowl along with the vinegar, buttermilk, oil, and butter. Knead well until you get a smooth, soft dough...
Cover the dough and let it rest for 1 hour.
Shape the dough into six equal pieces.
Roll out each piece separately, brush the top with butter, and stack the pieces on top of one another... (do not brush the final piece that will be placed on top with butter).
Roll the dough with a rolling pin until you have a large rectangular piece.
Brush the rectangle generously with butter...
Mix the filling ingredients of walnuts, almonds, granulated sugar, powdered sugar, and cinnamon... then sprinkle the filling over the butter on the dough, and roll it up into a log.
Cut the log into slices 2 cm thick.
Press each piece slightly with the palm of your hand so it takes a round shape.
Cover the round spirals and let them rest for half an hour.
After the time has passed... spray the tops with a little water.
Bake the walnut rolls in a hot oven until they turn a deep golden color.
Remove them from the oven and cover them with a cloth to keep them soft.
Once they have cooled, brush them with a very thin layer of apricot jam.
In a bowl, mix the icing ingredients: powdered sugar, a squeeze of lemon, and liquid milk (according to the amount of sugar). Add the milk gradually until you get the right icing consistency.
Using a spoon, decorate the tops of the walnut rolls with this sweet white icing... and serve the dessert.
